Brief Description
Sandesh is a type of cheese fudge or a paneer fudge flavored with saffron and pistachios. Sandesh is one of the popular and traditionally oldest dessert of India. It comes from Gujarat and West Bengal and it is still very popular in these parts of India especially during the festive seasons.
Time of Preparation Fifteen minutes Time to cook Thirty minutes Number of Serves Six Ingredients for Sandesh
- Paneer - 225 gms
- Sugar - 150 gms
- Rose Water - 1 tbsp
- Ground Green Cardamom Seeds - 1/2 tsp
- Sliced Pista – 10
Put some lime water in the boiling milk milk and make paneer out of it. You can get tips to make paneer from recipe books or even from the Internet. Mash the paneer until it becomes as smooth as possible. Now add some sugar. Put the mixture in a vessel over a low flame and stir constantly. The mixture leaves some liquid initially, and then starts to thicken. Let the mixture become creamy thick and then it automatically starts to leave the walls of the container. Now put the cardamom powder to the mixture and stir nicely. Take a plate and smear it with ghee. Place the mixture on the plate. Let the mixture cool at the room temperature. Once the mixture is cool, cut it into pieces of size and shape of your choice. Put some sliced pistas over the pieces to decorate. You can even add different flavors and colors to the mixture to make the dessert more delicious. Sandesh is popular all over India and mostly in West Bengal. It originally comes from West Bengal.
How To Make Sandesh
- Mix the paneer and sugar well.
- Heat the mixture and stir it constantly in order to minimize lumps.
- Once the mixture is thick add rose water to it and remove it from the flame. Keep on stirring for some time.
- Put the pistas and cardamom in two separate bowls.
- Make the mixture into different parts and shape it into desired sizes.
- Dip the pieces into the bowls of pistas and cardamom in turn so that they gets coated.
- Serve it cool.
