Brief Description
Chennar Payesgsh is a very famous Bengali recipe that adds to the joy of people in celebrating festivals. It is a very easy to make recipe and requires very basic domestic ingredients. This chennar payesh preparation is easy to make and the time for preparation is very less. It has a beautiful blend of flavors in it. This dish can be seen cooked largely at the time of festivals and pooja. It is essential for every East Indian cuisine to have chennar payesh recipe as one of its components. Large numbers of people are fond of this chennar payesh preparation.
Time taken for its preparation Thirty minutes Time taken for its cooking Fifteen minutes Servings 4 people Ingredients for Chennar Payesh
- One And Half Cup Of Milk
- Half A Cup Sugar
- One And Half Tablespoon Lemon Juice
- Some Strands Of Saffron Also Known As Kesar
- Five Or Six Pieces Of Almonds That Are Blanched And Finely Chopped
- Seven To Eight Pieces Of Pistachio Nuts That Are Finely Chopped After Blanching
How To Make Chennar Payesh
- Take two tablespoons of lukewarm milk and soak some strands of saffron in it. Keep the mixture of milk and saffron aside.
- Take a pan that is hallow in depth and put half litre of milk in it for boiling. Add two tsp lemon juice in this boiled milk and allow it to curdle.Whle the milk curdles keep stirring the vessel continuously.
- Pour the solutionof-curdled milk into another vessel carefully after filtering a mixture through muslin cloth. Now strain excess water from the curdled milk leftover in the muslin cloth. Keep dipping the cloth containing curdled milk mixture in cold icy water until it cools down completely. After straining, allow the mixture to cool and keep it aside.
- Add few strands of saffron to boiling milk. Allow the simmering of milk on very low flame until the mixture reduces half to its previous amount.
- Now stir the mixture continuosly and keep adding sugar to it. Stirr the mixture thoroughly until sugar gets dissolved completely in the mixture.
- Put chena in a bowl and keep smashing it. Add little milk to this chena and keep it for simmering..
- Before removing the micture of chena from the flame, add some pices of finely chopped almonds or pistachio. Add the saffron soaked in milk to this.
- Now chill the mixture and serve it after it gets cool.
