Brief Description
Ras Malai, a delightfull, extremely sweet, soft, tender milk desert has earned great popularity in India. It is made from paneer (Indian cottage cheese), makes a great dessert, and is served chilled. It is made on all sorts of happy times such as birthdays, weddings, anniversaries etc. It looks very rich and difficult to make but it is not so. Just follow our quicker and easier method to make or prepare Ras Malai and enjoy this luscious, mouth-watering recipe.
Preparation Time 30 mins Cooking Time 60 mins Serves 16 Ingredients for Ras Malai
- Four Measuring Cups Of Milk For Channa (Diluted To 2% Of Milk)
- Three Measuring Cups Of Milk For Ras
- 4 ½ tablespoon Sugar For Ras
- Additional Sugar (One Cup)
- Water Three Cups
- Almonds, Pista, Cardamom, And Saffron
- Lemon Juice
How To Make Ras Malai
- Boil three cups of milk until only 1 ¾ is left. Keep it in a separate bowl. This will be used for preparing Ras.
- Heat four cups of milk until it is lukewarm. Add lemon drops to split the milk.
- Using fine muslin cloth, drain the liquid. Press hard so that no liquid is left. Keep the leftover paneer in a separate bowl.
- Take out the chanas on a plate after soaking them for some time. Mash them well and make fifteen small size balls.
- Add 3 cups of water to a pressure cooker. Add 1 cup of sugar.
- Place the chana balls in the cooker and cook the mixture until two whistles.
- Add sugar to the milk that had been set aside for Ras. Garnish it with saffron, almond, pista, and cardamom. Allow it to cool if it is still warm.
- Open the pressure cooker and pick the channa balls with tongs. Press the balls a little to drain excess liquid.
- Add channa balls to the milk.
- Put them in fridge.
- Serve them chilled.

Some Useful Tips
Before serving, garnish with silvers of dried fruit. Before serving, refrigerate it.
