How to make Chicken Curry Malabar

    • Clean the chicken with water and then squeeze some lemon on it and mix. Then rinse again.
    • Heat up a pan and pour some oil in it. Once the oil has heated up, add the whole spices and sauté them.
    • Add onions and fry them till they are transparent. Then add ginger, chilies and garlic and stir well. Add tomatoes and rest of the spices and finally add chicken and cook them all uncovered on low flames for some time. Do not add any water since it will hinder in cooking. Keep on stirring to prevent spices from getting burnt. This will take 10-15 minutes
    • Sprinkle some pepper and salt to taste. Check whether the chicken is done. If there’s no water then add ½ cup water and cook it with covers on for 5 minutes. For making extra gravy add ¾th cup of water and bring it to a boil. Finally after switching off the flames, throw in the coriander, curry and mint leaves.
    • Chicken curry Malabar is now ready to be served.
