Gujarati Recipes
Gujarat is one of the western states in India on the western coastline of Arabian Sea. Gujarat is considered to be one of the oldest regions with sites of Indus Valley civilization at places such as Lothal and Dholavira.
Gujarati cuisine is special cuisine which is uniquely different from other cuisines in north and west India. Gujarat has great influence of Jainism and Hinduism which propagate vegetarianism. Most of Gujarati people are vegetarians.
Traditional Gujarati cuisine includes Thali, a large platter with several vegetarian curries, gravies, dal (lentils), pickles which accompany rice and rotis (baked flat wheat bread). Almost all varieties of vegetables are used in Gujarati style of cooking. These vegetables and lentils are boiled and then added to spices fried in hot oil. Other ingredients that Gujaratis use include sugar, lemon, tomato and jaggery to the curries or dals.
