Chena murki is a Bengali sweet, which has coatings of sugar on it. Preparation of chena murki is very easy and less time taking. Chena murki recipe is very simple and this sweet can be prepared easily by following just a few steps. It forms the basic component of the cuisine of east India. - Seven Hundred And Fifty Grams Of Cottage Cheese Famous By Name Paneer
- Five Hundred Grams Of Ghee
- Three By Four Cups Of Sugar
- Water One Litre
- One By Four Teaspoon Of Black Cardamom Powder If Necessary
- Rose Essence About Ten To Twenty Drops
How To Make Chena Murki
- Take cottage cheese or paneer and cut it into very small pieces.
- Take a vessel having heavy bottom and heat ghee in it. Now in this heated ghee mixture allows the cubes of paneer to fry for sometime. After sometime, you will notice the cubes start getting brown. Fry paneer in it to obtain light golden color. After achieving light golden color turn the flame off and takes the cubes of paneer in a separate vessel.
- Prepare a thin cyrup of sugar and water by putting them in a large vessel and filling the vessel to three fourth its quantity. Keep cooking this dilute sugary syrup until you see the syrup turning thick.
- Put powdered cardamom or essence of rose as per choice of flavor. After addition of either of the components, turn the flame off.
- Soak the golden brown fried pieces of cottage cheese in this flavorful sugar syrup. Start mixing the sugar syrup and the golden brown pieces of paneer until the pieces get a coating of sugar on their surface. After the desired coating is obtained let the mixture cool down for some time.
- Chena Murki preparation gets ready by this time.
Some Useful Tips
The sugar should be coated properly on the cottage cheese pieces. The mixture should be allowed to cool down properly to avaoid breaking of the pieces.
