Description In Brief
Kerala is the state which has its splendid cultural heritage which is reflected in its various traditional festivals and occasions. Dishes of Kerala have exclusive identity with the dish having its unique flavor. Vellayappam is one such dish which is popular in various parts of the state. This tasty dish is made up of batter of rice, coconut as well as yeast. It is fermented until there is development batter in the volume. It means white-appam in literature. Taddy is nowadays exclusively used for the process of fermentation. It has generally lacy edges with center being soft. This dish is mostly served with potato-kurma, fish-mollee, mutton besides some specific coconut-milk. This dish can be a heavy breakfast which can be taken easily.

One is required to arrange following ingredients in order to prepare this tasty dish.
- 2 cups of raw rice (Basmati Rice can also be used)
- One cup of fresh and grated coconut
- A quarter cup of cooked rice
- Half tbsp yeast
- One tbsp sugar
- A Quarter tbsp of salt
How To Prepare Vellayappam
Before one starts making the dish it is feasible that all of the instructions have been followed. Following lines describes the recipe in steps
- First step involves soaking of rice in water for at least 4 to 5hours
- These soaked rice are grounded in the grinder, grated-coconut, and cooked-rice. Small amount of water is also added at the same time. Nature of batter should be neither too watery nor too thick.
- Batter is now poured in the utensil. Following fermentation batter is enlarged in the size therefore big size utensil should be used.
- In the lukewarm water sugar is added and soaked. This yeast solution is added in the batter and stirred.
- After batter is fermented salt is added to the same.
- Vellayappam is made in the non-stick pan which is greased with oil. Batter full spoon is poured in the pan and is spread in the circular shape. With closed lid it is cooked with low heat.
- After removing it from the heat it is served hot.
