Brief Description
Kerela is in its own term a God’s country. Most famous in this state is its green as well as lush vegetation. This vegetation introduces Kerela as an earth’s paradise. This same vegetation has also given people a wide variety of tasty, spicy as well as tangy dishes. By rice layering along with masala gravy, Kerela Biriyani can be made. Gravy used in it is of many varieties. This can be gravy based of onions, plain tomato or leftover mutton or chicken dish.
Preparation Time 20 mins Cooking Time 30 mins Serves 4 Ingredients For Kerala Biryani:-
For The Rice
- You Can Take Use Of Two Cups of “Basmati Rice”
- One Table Spoon of oil
- Salt – to taste
- Water – as required
- Half Tablespoon of Biryani Masala
- Turmeric Powder – 1/2 tsp (optional)
For The Biryani Masala Gravy
- Finely chopped Onions – 2 medium sized
- Cinnamon – 1″piece
- Chopped Tomatoes – 2 large
- Gashed Chilies (Green) – Four
- Take use of four cloves
- Half tablespoon of “FENNEL SEED”
- Two leaves of Bay
- Cardamom – 4 pods
- Fresh Paste of garlic and ginger – two tablespoon
- Half tablespoon of powdered turmeric
- Two table spoon of powdered masala of chicken
- One or two tablespoon of Biryani Masala (Homemade)
- Cilantro, chopped – 1/4 cup
- Mint leaves, chopped – 1/4 cup
- Cashew Halves – 1/4 cup
- Two Table spoon of “LEMON” juice
- Refined oil as per your requistion
- One tablespoon of powdered chili (Kashmiri)
- One goblet yogurt
- Raisins – 1/4 cup
- Salt according to your taste
How To Make Kerala Biryani
- In a bowl, take Basmathi rice and soak it in water. Keep it aside for 1 hour.
- In another big pan, boil 6-8 water cups. When water comes to boil, reduce stove’s heat and put drained as well as soaked Basmathi rice in it. Also, add salt, turmeric powder ½ tsp, biryani masala ½ tsp as well as 1tsp oil. Cover this pan and cook rice for 8-10 minute. Keep checking rice. Put this pan down and drain all excessive water from it. Remove only when every rice grain is separate and they are not entirely cooked. In another tray, spread cooked rice and cool it.
- Take a wok or nonstick pan and heat 3tbsps of ghee as well as oil.
- In case a person is going to put dried fruits as well as nuts in it, he needs to fry almonds, raisins as well as cashews. Fry them until raisins plump up or cashews turn light brown. Drain all excessive ghee or oil and put aside.
- In same ghee or oil, add cinnamon, fennel seeds, bay leaves, cloves as well as cardamom. Fry for around 2 minutes.
- Sauté onions in it. Put green slit chilies, mint leaves as well as chopped cilantro. Fry until onions turn brown.
- Now put chopped tomatoes in it and keep cooking until they are mashed as well as pulpy.
- Now put paste of garlic as well as ginger in it and sauté until its raw smell fades away.
- Add 1tsp powder of biryani masala, chili powder of about 1tsp, ½ tsp turmeric as well as powder of chicken masala of about 2tbsp. Sauté these masala for around 1 minute.
- Now add whisked yogurt’s 1 cup in it with salt in pan and mix. Let it simmer.
- Cook for 10 minutes on medium flame after covering the pan. When cooked, put this masala gravy away.
- Preheat microwave oven to F 350 degree. On aluminum foil as well as baking dish, apply oil or ghee. Now layer cooked rice as well as masala onion and tomato gravy in it alternatively. Also, spray juice of lemon in between of these layers.
- Put aluminum foil over it. Bake it for time of around 25-30 minutes.
- At the end, garnish this biryani with dried fruits as well as fried nuts.
- Serve hot with, boiled eggs, pickle, pappad or raitha.

Some Useful Tips
- Best way to relish it with is raita or lime pickle.
- One can use raita made of tomato, curd, salt, green chilies as well as onions.
- In case one makes Mutton biryani, one just has to use mutton in place of chikan in same quantities.
