For The Dough
- Fenugreek (Methi) Leaves, Properly Chopped-1 1/2 cups
- Whole Wheat Flour (Gehun Ka Atta) or Plain Flour (Maida)- 1 1/2 cups
- Baking Powder-1/4 tsp
- Fresh Curds (Dahi)- 1 tbsp
- Melted Ghee-2 tbsp
To Be Mixed Into A Stuffing
- Grated Paneer (Cottage Cheese)- 100 gms
- Green Chillies, Chopped-3 to 4
- Chopped Corriander (Dhania)- 2 tbsp
- Add Salt According to Taste
How to make Shahi Puris
- Sprinkle some salt over the finely chopped fenugreek leaves and put it aside for 15 minutes, now take them out and squeeze out the water from it.
- Now mix the flour and the fenugreek, curds, baking powder and melted ghee and prepare dough by adding a small quantity of water.
- Now divide the prepared dough into 10 balls and then roll out the prepared balls into a small round shape.
- Now add 1 teaspoon of the stuffing in one round and fold the edges towards the centre and close it and then roll out again.
- Repeat the same procedure for the remaining rounds and stuffing.
- Now start deep frying it in ghee.
- Now the puris are prepared and are ready to serve hot.
Some Useful Tips
- The centre part should be pressed lightly with the frying pan while frying the puri, this will help it in puffing up.
- Chole masala used in recipe is a mixture of many spices which is easily available at almost all grocery stores.
