Brief Description
Batata Wada is the most popular burger for the Mumbaikars. The Vada is made of a spicy potato filling, coated in a gram flour batter and deep-fried. This dish is put inside a small "Laddi Pav" and served with hot and spicy garlic chutney. You can easily learn the Batata Wada recipe by following this method.
Time for preparation Ten minutes Time for cooking Thirty minutes Pieces Eight Ingredients for Batata Wada:-
- Eight Small Squares Of White Bread (Ladi Pavs)
- One Recipe Of Dry Garlic Chutney
- Cooking Oil Used For Deep-Frying
For The Vada Filling
- Half Cup Of Boiled And Mashed Potatoes
- Two Finely Chopped Green Chillies
- One And Half Tablespoon Of Grated Garlic
- One Tablespoon Of Mustard Seeds ( Sarson / Rai )
- One-Fourth Tablespoon Of Asafoetida (Hing)
- Six To Eight Curry Leaves (Kadi Patta)
- Half Tablespoon Of Turmeric Powder (Haldi)
- One Tablespoon Of Cooking Oil
For The Outer Covering
- Three-Fourth Cup Of Besan (Bengal Gram Flour)
- One-Fourth Tablespoon Of Haldi (Turmeric Powder)
- A Pinch Of Baking Soda
- One Tablespoon Of Cooking Oil
- Salt For Flavor
How To Make Batata Wada
For The Vada Filling
- Take the required amount of boiled and mashed potatoes in a dish, add green chillies, ginger and garlic into the mashed potatoes using a mortar and pestle, and add lemon juice in it.
- Add the curry leaves, asafetida and sauté the mixture for a few seconds. Add turmeric powder and salt to the mixture and mix it well.
- Divide the mixture into eight equal parts and shape each part into a round shape.
For The Outer Covering
- Mix all the outer covering ingredients in a bowl and make a batter of it using approximately one-third cup of water.
- Dip each round shaped Vada filling into the batter and allow it to coat the mixture from all sides.
- Heat oil in a pan and deep-fry the Vada until it becomes golden brown. Drain the excess oil using absorbent paper and keep it sideways.
How To Proceed
- Cut each pav into two pieces and spread the dry garlic chutney inside it.
- Place one Vada in each piece of pav and serve it quickly.

Some Useful Tips
- Laddi pavs are usually available at local bakeries and are in small square shaped white bread rolls.
- One can use slices or rolls of Bread if pav is not available.
