Vada being one of the widely used dishes of Maharashtra Maharashtrian vada Recipes details will be found as follows. Also knows as Mumbai’s burger it is supposedly tagged as "poor man's food" because of its ease of availability and prices accessible to everyone. It is made of spiced mashed potatoes deep fried inside a batter of gram flour with some spices. Usually taken with spicy chutney the Maharashtrian vada Recipes are as follows:
Preparation Time: 10 mins.
Cooking Time: 30 mins.
Servings: 8 pieces- 8-10 potatoes full boiled peeled and mashed properly.
- 2 tsp garlic paste
- 1 tsp ginger paste
- 3 green chillies
- 1/2 tsp tumeric powder
- 1/2 tsp black mustard seeds
- 6-7 curry leaves
- Salt according to taste
- 2 cups bengal gram flour
- Vegetable/canola/sunflower/mustard cooking oil for deep frying
Preparation:
- Knead the gram flour with appropriate water, salt and red chili and mix them to make a smooth paste and leave for some time.
- Add ginger and garlic pastes with small pieces of green chillies and mix them properly.
- Mix the ginger and garlic paste with the potatoes and work with spices as your taste.
- In 2 tbsp of oil mix mustard seeds, curry leaves and turmeric powder and fry till the seeds pop and settle down, and add this to the potato.
- Apply some oil on palms and make balls not bigger than a table tennis ball.
- Make the oil ready by heating in a fry pan for deep frying. The flame should be adjusted to medium.
- At the optimum temperature put these balls one by one in the gram flour covering it fully and then frying them in oil till they turn golden brown. After frying take them out and soak on paper tissues.
It is recommended to eat them with Pav by inserting them in between along with a variety of Chutneys ranging from Tamarind to Min-Coriander to Groundnut Garlic chutney.
