Brief Description
It is a special dish from unusual land of West Bengal. This recipe khichadi provides you enough amount and quantity of iron in just one little serving.
Cooking Time 30mins Preparation Time 15 mins Serves 4 Ingredients for Khichuri
- Potatoes (Cubed) 4 medium
- Sugar1/2 tsp
- Green Gram (Moong Dal) 1 1/4 cup split, roasted
- Water (Approx) 6 cup
- Green Chillies6
- Cumin Powder2 tsp
- Peas1/2 cup
- Rice1 1/4 cups
- Salt According To Taste
- Cauliflower Florets250 gms
- Turmeric Powder1/2 tsp
- Powder Of Red Chili 1/2 tsp
For The Seasoning
- Ghee4 tblsp
- Red Chilies 3 Whole
- Cloves6
- Two Cinnamon Pieces Of 1 inch
- Bay Leaves2
- Green Cardamoms 4
How To Make Khichuri
- Slit all the green chilies along with roasting of moong dal and cuttings of cauliflower florets.
- Make paste from cumin powder, turmeric powder and powder of red chili.
- Wash and drain rice.
- Take proper amount of water in a big pot and mix rice and fry dal in it.
- When half done of rice is complete add Masala paste, vegetables, and green chilies and simmer until the mixture is cooked.
- In sometime the rice and dal will cooked.
- After heating in pan add red chilies, garam Masala, and bay leaf and mix it until fry for one minute to make a flavor.
- Mix the mixture of flavor into the pot in which khichuri is cooked
- Serve it hot with toppings of ghee on it.

Some Useful Tips
It needs to wash all the ingredients like dal and rice properly in running tap water. It is very much necessary to avoid any kind of impurity. The impurities that mostly affect the taste and cooking are miniature of stones and husk of rice. While washing keep it in mind that all these impurity has to be removed. Chopped side stuff properly and use all the spices ingredients in proper ratio to make perfect khichuri. Serve it hot as cooling can spoil the leisure of the recipe. You can also use pickles and curd with it to enhance the taste. Papad and ghee is also useful side products that make the taste of khichuri double.
