Brief Description
Payasam is a rice pudding of India that is made of rosematta rice, sugar as well as milk. This rosematta rice also has alternative name of Kerela red or Palakkadan matta. Its garnishing is done via raisins as well as cashews.
Preparation Time 15 mins Cooking Time 30 mins Serves 3 Ingredients For Pal Payasam:-
- 1/3 Cup - Rosematta Rice, Wash Well
- 2 - Cardamom ( Optional ), Crush and Powder
- 1.5 cup – sugar
- 8 cups - Milk ( read note below
Garnishing
- Ghee
- Few Cashew Nuts
- Few White Dry Raisins
How To Make Pal Payasam
- Take pressure cooker and boil milk in it. Next, add sugar as well as washed rice to it and close with help of lid. Let it cook it full pressure. After first whistle of cooker, lower down flame and let it boil for next 45 minutes.
- When one opens cooker, he can easily find Pal Payasam’s dark pink beautiful shade. When it cools down, one can easily check its sweetness and make changes according to it. One can serve payasam sans any garnishing.
- However, if want to garnish use cardamom. Add powder of cardamom in it and mix well. Take another pan and heat ghee in it. Next, fry raisins as well as cashew nuts in it. Garnish payasam with it.

Some Useful Tips
Boiling the milk and then adding the rice to it will make the rice soft and will provide an extra taste. Taking use of a cooker is the best object which you can use to boil milk.
