Brief Description
“Land of coconuts” is another name for state Kerela. Even most popular health drink in this state is water of tender coconut or Elaneer. This coconut is both delicious as well as nutritious. This water has a unique good flavor. Most famous and loved Kerela’s pudding is Karikku. Main ingredients of this pudding are coconut water, milk, and coconut pulp as well as china grass. With below given recipe, get to taste most yummy desert.
Preparation Time 20 mins Cooking Time 30 mins Serves 4 Ingredients For Karikku Pudding:-
- Tender Coconut (Water and Pulp) : 2
- Condensed Milk : 1 tin (reduce sugar if using condensed milk)
- Milk : 1 1/2cup
- Gelatin : 5 tsp (If you don't have gelatine and replace with 10 grms china grass)
- Water : 1 cup
- Vanilla Essence : ½ tsp
- Sugar : 1/2 cup or according to your taste
How To Make Karikku Pudding
- Take water in container that is microwave safe and measure it. Heat it until it steams that is for 2 minutes in microwave. One can also heat this water in saucepan and make it boil.
- Stir water continuously with fork or a whisk while removing it from flame. In another step, sprinkle gelatin over it and stir. This stirring is necessary to make sure that no lumps are formed. In another case, if a person is taking chine grass, then one needs to soak it in water in a cup and put it on low flame. Continuous stirring is necessary to make it dissolve.
- In blender, take coconut pulp and water together and blend them. Set this blended mixture aside.
- Take other coconut, which is tender, and cit its flesh in very small pieces. Keep these pieces aside too.
- Take a pan and heat condensed milk as well as milk in it. Stir while heating.
- Add sugar to this milk and stir continuously until it entirely dissolves.
- Put china grass or gelatin mixture in it. Strain it and later add mixture of milk and sugar to it.
- Relocate it to dish. Now add coconut pulp blended form in it. Stir again.
- Put flesh of coconut flesh in it in form of thin scrapings in this mixture.
- Transfer this pudding into cups or bowls. After this, put it in refrigerator and let it cool down for around 2-4 hours.
- Enjoy this pudding as a dessert later on.

Mashing the coconut is a better option for you if you are making this wonderful and tasty sweet dish. Blending it with pistachios and almonds will make this lovely dish taste better.
