Shrikhand
Brief Description
Shrikhand is a delicious and delightful sweet dish. It is most famous sweets of Maharashtra cuisine that is made all over India. Shrikhand is very easy to make but require some extra time and efforts. It is prepared with strained curd/yogurt by following this recipe.
Time to Prepare 2-4 hours Time for cooking 55-60 minutes Serves 4 Ingredients For Shrikhand
- 2 kilograms – Yogurt/Curd
- 7 to 8 strands - Saffron (kesar)
- 2 tablespoons - Milk
- 1/4 cup - Almonds
- 1/4 cup - Pistachios
- Sugar – As per your taste
- 1 1/4 teaspoons - Green cardamom powder
How to make Shrikhand:
- Take curd and drained it nicely with thin muslin cloth. Set it into the refrigerator for about 2-3 hours. Make sure water from the curd drained off.
- Add saffron in the milk and keep aside. Blench almonds and set aside to cool completely.
- Now cut the almonds and pistachios into the slivers and add sugar powder.
- Covered the pan properly via clean thin muslin cloth.
- Now in a vessel, take clean strain string to tie the cloth.
- Move the strain curd with sugar from above the thin cloth, in little quantities.
- Add 3-4 cup of sugar, for every cup of strain curd.
- Grate it over the muslin cloth till the all mixture is strained.
- Now mix the dissolved almonds, saffron, green cardamom powder and pistachios to it. Knead well and drop it into the bowl and set aside for cool completely or cold.

- You can use chakka and sugar and knead it properly instead of straining chakka.
