Puran Poli
Brief Description
Puran Poli is a traditional type of sweet dish flatbread that is made during festivals like Holi in India. It is delightful and more popular in the states of Karnataka, Maharashtra, Gujarat, Goa, and Andhra Pradesh in India. Even though it resemble like roti, a puran poli is very different.
Preparation Time Minutes - 10 Cook Time Minutes - 15 Serves People - 4 Ingredients For Puran Poli
- Whole wheat flour (atta) - 1/2 cup
- All purpose/plain flour (maida) - ¼ cup
- Oil - 2 tablespoons
- Water - 1/3 cup
Filling
- Toor dal (arhar dal) - ¾ cup
- Sugar - 1 cup
- Turmeric - ½ teaspoon
- Cardamom powder (eliachi) - 1 teaspoon
- Nutmeg (jaiphal) - ¼ teaspoon
Also Needed
- Oil - 3 tablespoons
- Dry whole wheat to roll the bread - ½ cup
How to make Puran Poli
Filling
- Take toor daal in a pan, wash it well and add 2 cups of water, set aside it for some few hours till it become double in volume after soaking.
- Now take soaked daal in a pan, add 2 cups of water with turmeric and put it on average heat for heating.
- Once the daal start boiling, you will seen some foam on the top layer of daal. Erase it. Decrease the heat and covered it nicely with lid.
- Allow to simmer it for 25-30 minutes. Keep stirring it nicely till it becomes mush and softy.
- Now add sugar to it and cook it for 5-10 minutes until it becomes pasty. Switch off the gas.
- Mix nutmeg and cardamom, blend well and set aside to cool completely.
Dough
- In a large glass bowl, add all purpose flour, whole-wheat flour, refined/oil and water as per requires. Blend well till it becomes softy.
- Gather it aside for 10 minutes.
Making Puran Poli
- Make the dough into 10 equal parts and stuffing the dal that should be 2 1/2 times the size of the dough.
- Press one part of dough slightly in dry whole-wheat flour. Make it into circle form of 2 ½ diameter. To make ball, Keep stuffing in the mid and seal via stretching the edges. Make all balls and keep aside for few minutes.
- Take a pan and heat it on average flame.
- Now press all sides of filled balls slightly in dry whole-wheat flour. Store the ball with closed side up, roll it with the help of your fingers informing of 5-inches circle gently. If the dough is sticky as rolling, garnish dry whole-wheat flour on both sides.
- Transfer the puran poli into the pan and simmer for a minute. Flip it.
- Drop the 1 tsp oil onto the puran poli and flip it again.
- Now press puran poli and flip again. Allow to cook for about 2 minutes till the slight brown on both sides.
- Now puran poli is ready to enjoy eating and served.

- Always use large pan for cooking dal.
- You can place it for 7-8 days in the refrigerator.
