Karanji
Brief Description
Karanji is more delicious and more popular sweet dish that is made all over India. This sweet dish is a Holi special. Making of Karanji needs some time and extra efforts and the taste is awesome after trying it. You can place it for weeks and enjoy eating like as snacks. For Dough
- All Purpose Flour / Maida - 1 cup
- Sooji / Rawa - 1/4 cup
- Oil - 2 tsp
- Warm Milk - 1/2 cup
- pinch of Salt
For Filling
- Poppy Seeds / Khas Khas - 1 tsp
- Sooji / Rawa - 1 tsp
- Dry Grated Coconut - 1 cup
- Powdered Sugar - 1 cup
- Cardamom powder - 1/4 tsp
- Assorte-Nuts
Extra
- Rice Flour - 2 tsp
- Ghee - 2 tsp
- Oil - for frying
How to make Karanji
For Cover / Coating- In a bowl, heat oil and mix rava, salt and all purposes flour to it. Knead well till they become the crumbly.
- Add boil milk and knead well until the desired consistency is reached. Make sure not too hard or soft. Set it aside for 25-30 minutes.
For Filling / Stuffing
- Take a pan and roast the rava till it becomes golden or slightly brown.
- In another pan, add khas-khas (poppy seeds) and roast it until it becomes little brown or golden.
- Combine it and add sugar, coconut to dry, dry fruits, cardamom powder to it. Blend it properly.
To make Karanji
- Divide the dough in 3-parts and roll it into informing of roti.
- Now add ghee and rice flour in it. Mix it well till they become creamy and smooth.
- Keep one roti and spread rice flour mixture on it, put another thin roti on the top of it. Similarly do it again at all.
- Roll these 3-rotis properly like Swiss roll.
- Slightly strain it and cut it into same sizes.
- Now roll it like poori, add filling, set milk it’s all sides and seal it well.
- Hanger it and prepare design about karanji.
- Now fry it till it become golden color and light brown.
Some Useful Tips
- You can make simple or plane karanji using this dough.
- You can prepare the karanji crisp. But make sure the outer layer of the dough mixed well and tough.
- You can use mix wheat flour and all purposes flour to make outer layer of the dough instead of chirote sooji (fine variety).
