Kaju Katli
Brief Description
Kaju katli is one of the most popular dessert that is easily available every sweet shops in India. It is also known as Kaju barfi and it is very similar to a regular barfi. There are some ingredients to make barfi like cashews powder, khoya, sugar, cardamom powder and ghee.
Time to Prepare Minutes - 15 Time for cooking Minutes - 70 Serves People - 4-6 Ingredients For Kaju Katli
- 1.5 cups (150gms) - Powdered Cashews
- 1 cup (110gms) - Powdered Sugar
- 1/2 cup (60gms) - Instant Non-Fat Dry Milk (Milk Powder)
- 1/8 tsp - Cardamom Powder
- 2 tbsp - Water
- 2 drops (optional) - Rose Essence
How to make Kaju Katli:
- In a double boiler, add the water and boil it.
- When warm, mix the powdered sugar and milk powder to it. Keep stirring it continuously till the desired consistency is reached.
- When it is done, add the cashew powder and cardamom powder. Blend well. If you are using Rose essence add it as per your taste.
- Keep stirring continuously by adding some water till they become dough and cashew observed the oil.
- Stuffing pin for easier rolling with the help of your grease hands. Keep in mind that the preferred thickness on to a wax paper to avoid sticking.
- To make the roll, cut it into desired shapes. Set aside for 1-2 hours to cool completely.
- Serve it into the refrigerator for great taste.
Double Boiler:
- In a pan, add water and boil it.
- In another pan, place it well on top of the bottom pan. When the water boiled, another pan is used for boiling. Make sure it is not direct and intense heat.

Some Useful Tips
- You can add Varak for making grand and traditional look; otherwise barfi will taste just as good.
- You can use coffee grinder for cashew powdering for better results.
