Brief Description
Onions are one of the most used food items. Onions can not only be used just as an ingredient but also as chutney. Find a simple recipe below to make onion chutney.
Time required to prepare 10 minutes Time required to cook 25 minutes Serves 4 Ingredients For Palada Payasam

For Ada:
- 1cup : Rice flour
- 1/4cup (may be less or more depending on the rice flour) : Water
- a pinch : Salt
- 2 tbsp : Coconut Oil
- Fresh or frozen for spreading the dough : Banana leaves
For Payasam:
- 4cups : Whole Milk/Thick Milk
- 4-6cups or Adjust according to taste : Sugar
How to make Palada Payasam
- Take a bowl and add the rice flour, coconut oil and water in it and mix it well to make a soft dough. Cover it.
- Take the plantain leaf pieces and clean it. Now take the oil and spread it on the leaves backside.
- Divide the rice flour dough into small size balls and spread it finely.
- Now take a toothpick and draw cris cross lines over it like grill marks or small cubes.
- Take a large and wide pan and add water in it and bring it to boil. When the water becomes really hot then take the banana leaves and ada and drop it into the water.
- Now take it out from the pan and keep it in another warm water container.
- Strain it and then rinse it thoroughly with the help of cool water for about 3-5 times so that excess stickiness of oil is removed.
- Meantime take a heavy bottomed vessel or uruli (shallow kadai of kerala in which payasam is made) and heat milk in it. Allow it to boil until it becomes thick and pale pink in color.
- Add the rinsed ada into the milk and allow it to boil until it becomes condensed or thick.
- Lower the flame and slowly add sugar in it. Allow it to cook for about 4-6 minutes so that it becomes thick.
- Palada Pradhaman is ready. Serve cold or hot as you like and enjoy it.

Some Useful Tips
- Take one drop of payasam and drop it on the surface, if it stays there then the consistency for payasam is correct or draw a line on the ladle and if it does not join then also the consistency for payasam is correct.
- You can also use readymade rice ada for making the payasam which is easily available in all grocery stores of kerala.
