Kashi (food) Halva
Brief Description
Kashi Halwa is one of the most popular sweet dish of Udupi-Mangalore which is made of Ash gourd. It is one of the desserts which is usually served on occasions or functions. Kashi halwa can be prepared very easily and is very delicious.
Time required to prepare 10-15 minutes Time required to cook 20-30 minutes Serves 4 Ingredients For Kashi Halva
- grated winter melon/ash gourd/ boodkumbalakai : 2 to 2 1/2 cups
- sugar : 1.5 cups
- saffron : 4 to 5 strands
- elaichi/cardamom powder : 1/2 tsp
- raisins/cashew mixture : 1 tbsp
- ghee/clarified butter : 2 + 2 tsp
How to make Kashi Halva
- Take a winter melon and remove excess water from it.
- Take a pan and heat 2 tsp of ghee and fry the grated winter melon till it is well coated with ghee.
- Cook the grated winter melon in a pressure cooker for 1-2 whistles.
- Pour the contents into the pan and allow it to cook on medium flame until all the excess water is removed.
- Stir it continuously
- When the content reduces to three fourth in quantity then add sugar and mix it well.
- Allow it to cook again so that all the moisture evaporates and winter melon forms a single mass.
- This step may take around 40-50 mins. Stir it continuously at the end.
- Add saffron, elaichi and mix it well.
- Fry cashews and raisins in ghee and mix it in halva.
- Serve hot and enjoy it.
