Karjikai
Brief Description
Karjikai is a famous sweet dish which is generally prepared at the occasion of diwali and Ganesh Pooja. It is made of all-purpose flour through which medium size balls are prepared. The medium size balls are flatten into thin puris and filled with various kind of fillings and then fried. It can be easily stored in an air-tight container for 20 days and then also it remains fresh. Different variety of filling is used to prepare it and everyone either follow their family recipe to prepare it or prepare it as they like. Whatever the variety of filling is used they are very delicious.
Time required to prepare 10-15 minutes Time required to cook 20-30 minutes Serves 4 Ingredients For Karjikai
- Maida : 500 gms
- Salt : 10 gms
- Sugar : 100 gms
- Jaggery : 200 gms
- Coconut : ½
- cardamoms, crushed : 5 gms
- oil for frying
- water for the dough
How to make Karjikai
- Mix the maida and salt together. Add ghee in it and mix it well.
- Add adequate amount of water to make a stiff dough. Keep it aside
- Grate the coconut and jaggery and keep it aside.
- Take a pan and heat ghee in it. Add the grated coconut and jaggery, crushed cardamom and sugar and stir it well on a low flame so that fine mixture is prepared. Remove and allow it to cool.
- Divide the dough and the jaggery-coconut mixture into equal numbers and make medium size balls.
- Flatten the dough into puris.
- On one half of each puri put one ball of the sweet mixture.
- Fold each puri and press the edges to get it sealed nicely.
- Take a kadai and heat oil in it. Fry the puris till it becomes golden brown in color. Serve hot and enjoy it.
Some Useful Tips
- It can be stored in an airtight container for at least 10 to 15 days.
- In place of all purpose flour, rice flour can also be used for sprinkling in-between 2 layers of the rolled dough.
