Kakinada Khaja
Brief Description
Kakinada Khaja is a famous sweet dish of Andhra Pradesh, India. Kakinada is a coastal city which is located in Andhra Pradesh and is famous for Khajas. Hence in this way the name is formed. Kakinada Khaja is an image of Ranchi Khaja. At the time of nizams, Muslims brought the Khajas into Andhra.
Time required to prepare 10-15 minutes Time required to cook 20-30 minutes Serves 4 Ingredients For Kakinada Khaja
- 2 1/2 kg : Sugar
- 2 cups : Water
- 500 gms : Flour
- 1 tblsp : Besan Flour
- 1/2 tsp : Soda Bicarb
- 1 kg : Ghee
- 4 : Powdered Cardamoms
How to make Kakinada Khaja
- Take sugar and 2 cups of water and make 1 thin string syrup.
- Allow it to cool at room temperature.
- Take flour and sift it. Now sift it again with soda bicarb and besan flour.
- Take 1 to 2 tblsp of ghee and mix it well into the mixture
- Add cardamom powder and adequate quantity of water to make a dough.
- Set it aside for about 2 hours.
- Make 10 or more balls from the dough.
- Flatten each balls into thin chapatis
- Dab it with ghee and make thin long rolls.
- Now take the rolls and cut it into 2 inch pieces.
- Press each roll nicely so that it becomes flat.
- Take a pan and heat the remaining ghee in it.
- Fry the rolls on both sides till it becomes golden brown in color.
- Take it out from the pan and immerse it into cooled sugar syrup.
- Keep it immersed for few minutes so that it completely absorbs the syrup.
- Take it out from the syrup ensuring that outer cover do not break.
- Allow it to cool and place it in an air tight container.
