Jaangiri
Brief Description
Jangiri is a famous sweet dish which is made of urad dal. It is generally prepared in Tamil Nadu at the occasion of Diwali. With a little practice it can be easily prepared at home. This year in Diwali just try to make it.
Time required to prepare 15 minutes Time required to cook 20-30 minutes Serves 4-6 Ingredients For Jaangiri
- 1 cup of White urad dhal (dehusked whole black gram)
- 1 tbl sp of Rice
- 1 1/2 cup of Sugar
- 1/2 cup of Water
- Little Kesar colour
- Little Saffron
- 2 tsps of Rose water
How to make Jaangiri
- Take rice and dhal together and soak it in water for approx. 15 minutes.
- Take a wet grinder and grind it into a fine paste by adding little water.
- Allow it to grind for about 40-45 minutes and then add small amount of kesar colour in it. Now take it out from the grinder. (Take water and put the little paste in it and if the dhal paste floats then it means that consistency of dhal is correct).
- Take a heavy pan and add water and sugar in it. Heat it on a medium heat and stir it continuously till it reaches half string of consistency. Add kesar colour, rose water, little mashed saffron in it and mix it well.
- Take a kadai of medium size or 1 1/2 inch deep flat pan and heat oil in it.
- Take a jangiri cloth (make a cone shape and in centre make a small hole) and add dough in it. Properly close it and press it gently so that it forms two inch diameter of 2 continuous circles and continue the chain so that ring is formed and shape of jangiri is obtained.
- Allow it to cook on both sides ensuring that its color do not change and it should not be over crisp while frying.
- Now remove it from the oil and remove excess oil from it and then immerse it into the sugar syrup.
- Keep it immersed for about 1 minute so that it can soak the sugar properly.
- Remove it from the syrup and put it on a plate.
- In cone shaped cloth, take more dough and again repeat the same process with rest of the dough.
