Halbai
Brief Description
Halbai is one of the famous sweet dish of Udupi which is prepared during the occasion of Nagarpanchami. When it is used with ghee, it tastes very good. Halbai can be prepared very easily if the ingredients are taken in right proportion so that it turns sticky.
Time required to prepare 3 to 3.5 hrs (Including Soaking time) Time required to cook 20-30 minutes Serves 4 Ingredients For Halbai
- 1/2 Cup : RiceĀ
- 1/2 Cup : Grated coconut
- 1/2 Cup : Jaggery
- 6 tbsp : Ghee
- 3 : Cardamom
- 7 to 8 (optional) : Cashew nuts
Preparation
Wash and soak the rice in water for 3 hours. You can also use dosa rice or normal rice.How to make Halbai
- Grind the soaked rice into a fine paste along with cardamom, coconut and 1/4 cup of water.
- Take a kadai and heat it. Add 2 tbsp of ghee, 1.5 cup of water and jaggery into it. When the jaggery completely dissolve in water then lower the flame.
- Now add the rice-coconut paste into the boiling jaggery water and stir it continuously so that no lumps are formed.
- While stirring add 3 tbsp of ghee in it. When the mixture caves together and starts leaving the sides of kadai then Halbai is prepared. It may take around 45 mins.
- Spread cashews on a plate greased with ghee. Pour the paste into the plate and spread it.
- Allow it to cool completely and then cut it into different shapes as you like.
