Gavvalu
Brief Description
Gavvalu is one of the famous sweets of Andhra Pradesh which is made of a mixture (dough) of water or milk and rice flour. The dough which is prepared is divided into small balls and then nicely flattened and rolled (special tool is used) so that shape of gavvalu (cowrie shells) is formed. Now ghee or oil is taken in which these shell are fried and then it is kept aside for few minutes. These shells are poured into jaggery or sugar syrup when it is eaten.
Time required to prepare 15-20 minutes Time required to cook 1 to 2 hours Serves 5-6 Ingredients For Gavvalu
- 500 gms of Maida (all purpose flour)
- 100 gms of Butter
- 1 tsp of Salt
- 400 gms of sugar or jaggery
- 1 tsp of cardamom powder
- gavvalu mould (Also you can use a new comb or a fork)
- For deep frying : oil
How to make Gavvalu
- Take a big plate and add flour into it. Add butter and salt in it and mix it well. Then add adequate quantity of water to make a smooth but tight dough. Now cover it and set it aside for about 30 minutes.
- Divide the dough into small size balls.
- If mould is not present then you can use a new comb or a fork to make it.
- Take the mould and grease it with oil. Take the maida ball and press it nicely on the mould using your thumb.
- Repeat the same process and make shells with the rest of the balls.
- Take a pan and heat oil in it. Allow the shells to fry in the oil until it becomes golden brown in colour. Take it out and drain it using a tissue paper.
- Take a vessel and grate jaggery into it and then add 2 cups of water in it. Allow it to heat until the jaggery melts and then remove excess water from the syrup and again heat it so that it becomes thick. Now drop some syrup into a cup of water and if the syrup becomes a soft ball then the syrup is ready. Add the cardamom powder in it and then add shells into the syrup. Now mix it well so that syrup is coated properly.
- Cool it and store it in an air tight container. Delicious Sweet Shells/Theepi Gavvalu is ready. Serve and enjoy it.
Some Useful Tips
- To make it crispy, you can add sooji rava in it. You can also use chiroti rava in it. If you want you can also add chiroti rava with 2 spoons of sooji rava.
- If the shape of Gavvalu is not formed nicely then the dough might be too soft. Now add more sooji rava into the dough so that it becomes tight.
- Close the dough so that it doesn’t become dry.
