Bellam Garelu
Brief Description
Pakam garelu is a fried crisp vadas which is made with Jaggery syrup. It is a famous sweet which is generally prepared at the time of festivals. It is one of the famous desserts of south India and is mostly served at tea-time. Since garelu is crisp it is served warm and make sure that after absorbing the syrup it doesn’t become too soggy.
Time required to prepare 10 minutes Time required to cook 30-45 minutes Serves 4 Ingredients For Bellam Garelu
- whole urad dal (black gram dal, minappappu) : 1 cup
- salt to taste
- oil for deep frying
- 1 cup grated jaggery, add water, cook to prepare a syrup that is sticky on touch
- Water : 1 1/2 cups
How to make Bellam Garelu
- Wash and soak whole black gram dal in water for about 2 hours.
- Remove the excess water and take the dal and grind it to a fine paste by sprinkling little salt and water. For grinding take small quantity of dal as it would be easier to grind it to a smooth paste. Beat till it becomes soft.
- Heat water and add jaggery in it. Allow it to melt until the syrup becomes sticky. When the jaggery syrup is forming then at the same time allow the vadas to deep fry.
- Take a frying vessel and add adequate quantity of oil in it and allow it to heat till it becomes piping hot.
- Apply water on your hands and take small size balls of batter. Then flatten the balls into a vada and put it on a banana leaf or greased sheet. Now take the vada and in the centre make a hole so that it can nicely cook.
- Carefully drop the vadas into the oil and allow it to fry on medium flame until it becomes golden brown in colour. According to the size of vessel, take the vadas and fry it.
- Now take the fried vadas and immerse it into the jaggery syrup. Leave it into the syrup until the other batches of vadas are fried. Now take it out into a plate and immerse the other batch of vadas into the syrup.
- If some syrup is left then drizzle it over the vadas before serving. Serve hot and enjoy it.
Some Useful Tips
Take a pinch of cardamom powder and add it to the syrup or take a pinch of freshly ground pepper powder and add it to the syrup to make the sweet more delicious. It depends upon your taste. Make sure that the jaggery syrup is thin. The vadas will become heavy when it will absorb the syrup but make sure that it doesn’t become too soogy.
