Adhirasam/ Ariselu
Brief Description
Adhirasam is a famous sweet dish of Tamil Nadu which is generally prepared at the time of festivals. The main ingredient which is used in it is Jaggery instead of cane sugar. In the Southern districts of Tamilnadu, Adhirasam is the most popular sweet dish. It is also popular in Chettinad area.

- 2 cups : Rice flour
- 1 1/4 cup : Jaggery
- 1/2 tsp : Cardamom powder
- 3 tsp : Ghee
- Oil: for deep frying
- Water: as required
How to make Adhirasa/ Ariselu
- Heat jaggery with adequate amount of water so that it dissolve and then filter it. Take the filtered jaggery water and boil it until the bubble comes out.
- Take a bowl and add rice flour in it. Now mix boiled jaggery in it and stir it well with the help of spoon. See that no lumps are formed. Allow it to cool. In the rice mixture, add ghee and cardamom powder and knead it well.
- Take a saucepan (kadai) and heat oil in it. In the meantime, make medium size balls from the mixture and flatten it on a greased plastic sheet so that it forms a puri shape.
- Now fry puri in the hot oil.
- When it becomes brown in colour then take 2 spoons and press it well to make sure that excess oil is removed and allow it to cool. Repeat the same process with rest of the dough.
- Adhirasam is ready. Serve and enjoy it.

Some Useful Tips
If the Adhirasam falls in the oil then it means the jaggery is more in it. As there are many different qualities of rice/jaggery present so the taste of Adhirasam may vary. If it is required you can add few more tsp of flour.
