Brief Description
Ila ada/Ela ada is a famous dish of kerala which is made of rice flour, coconut-jaggery filling and wrapped in banana leaf and then steamed in a steamer. This dish is generally served as an evening snack as it is very tasty and healthy dish. Sweet kozhukattai is also prepared from the same ingredients which are used to prepare this dish but different method is used to prepare both of them. Now let’s see how it can be prepared.
Time to Prepare 5 minutes Time for cooking 15 minutes Serves 4 Ingredients For Ada (food)
- 1 cup: Rice Flour
- 1 cup: Grated Fresh Coconut
- 1/2 cup: Powdered Jaggery
- 1/2 tsp: Cardamom Powder
- t tsp: Ghee
- A pinch of salt
- Plantain Leaves
How to make ADA
- For couple of minutes roast the rice flour and then leave it for sometime so that it becomes cool.
- Take a vessel and add rice flour and salt in it.
- According to the requirement add boiling water in it so that it becomes soft dough and set it aside for a while to make it little cool.
- Put oil / ghee in your hands and knead the dough until it becomes smooth and soft.
- Take a pan and mix the jaggery and water in it such that it makes a thick syrup.
- Add grated coconut and cardamom powder into it and allow it to cook for few minutes. Turn off the flame and allow it to cool.
- Now make medium or large size balls of dough.
- Take the ball in the middle of plantain leaf and spread it such that it form a thin poori. Keep a tablespoon of coconut mixture on it and fold the leaf and gently press it so that its edges are sealed.
- Similarly repeat the process until the dough is finished.
- Place it in a steamer or idly cooker and allow it to steam cook for about 10-12 minutes. Now turn off the flame and set it aside to cool it completely.
- From the idly cooker or steamer take out the steamed dumplings and remove the plantain leaf.
