Savoury Soup
Brief Description

Time to Prepare 15 minutes Time for cooking 30 minutes Serves 4 Ingredients For Savoury Soup
- olive oil- 2 tbsp
- diced onion- 1
- minced garlic- 4 cloves
- sliced carrots- 4
- diced celery- 3
- chopped butternut squash- 2
- vegetable broth-5 cups
- fresh sage- 2 tbsp
- soy milk- 1/2 cup
- salt and pepper to taste
How To Make Savoury Soup
- Heat olive oil in a large soup pot. Sauté garlic and onions for five minutes.
- Put in celery, carrots and cook for another 5 minutes.
- Add in squash and stir to coat it. Pour in the vegetable broth and sprinkle sage. Let it boil once and then lower the heat to let it simmer. Cook till the squash ahs softened.
- Use a blender to make a puree of this or use a masher to mash the squash.
- Add soy milk and season it with pepper and salt.
