Mixed Vegetable Soup
Brief Description
Mixed vegetable soup is a good appetizer. This recipe is full of nutrients because of the presence of vegetables. Just follow the directions provided below for preparing this recipe.
Time to Prepare 15 minutes Time for cooking 30 minutes Serves 4 Ingredients For Mixed Vegetable Soup
- medium sized onions-3
- tomatoes- 400 g
- split red lentil- ¼ cup
- bottle gourd- 150 g
- spinach- 1 cup
- medium sized carrot- 2
- water- 500 ml
- butter- 1 tbsp
- Corn flour (2 tbsp) mixed with half cup milk.
- salt as needed
- black pepper powder, v¼ tbsp
- spring onions, sliced- 1 cup
- crumbled paneer- ¾ cup
- soy sauce- 1 tbsp
- tomato ketchup- 1 tbsp
- vinegar- ½ tbsp
- sugar- ½ tsp
How To Make Mixed Vegetable Soup
- Wash and clean the pulses and vegetables.
- Take a pressure cooker and pour water in it, now cook vegetable and pulses in the pressure cooker.
- Blend the cooked vegetables and dal in a blender to a smooth puree. Make a fine and smooth puree of pulses and vegetables when they are done.
- Filter the mixture with water and set it aside.
- Take a pan and melt butter in it. Sauté the spring onions till they turn golden brown.
- Put in the crushed paneer and fry it for a while.
- Add in the puree, soya sauce, tomato ketchup, sugar, pepper powder, salt and water. Let it simmer for 10 minutes.
- Pour in the corn flour mixture and leave it to simmer for another 5 minutes.
- Serve the soup with a garnishing of leaves of mint
