Cold Cucumber Soup
Brief Description
Cold cucumber soup is extremely delicious recipe which has very low amount of calories. The soup is filled with nutrients and minerals because of low fat milk, cucumber and capsicum.
Time to Prepare 15 minutes Time for cooking 30 minutes Serves 4 Ingredients For Cold Cucumber Soup
- Fresh cucumber- 1 kg
- Low fat curd- ½l
- low fat milk- 3/4 cup
- chopped capsicum-1 tbsp
- low fat butter-2 tsp
- salt as needed
- Mint leaves
How To Make Cold Cucumber Soup
- Finely chop a cucumber. Cut up other cucumbers into bigger pieces.
- Take a pot and heat 3 cups of water in it. Add in the big pieces of cucumber and cook till they are done.
- Once done, blend the cucumber into a fine puree.
- Add milk, curd, salt and mix well.
- Take a pan and melt butter in it. Sauté the chopped cucumber and capsicum for half a minute. Once done mix in with the soup.
- Refrigerate the soup and serve it chilled.
