Caramelized Onion And Parmesan Cheese Soup

Time to Prepare 15 minutes Time for cooking 10 minutes Serves 4 Ingredients For Caramelized Onion And Parmesan Cheese Soup
- olive oil- 2 tbsp
- sliced onions- 2 cups
- garlic cloves-14
- bay leaves- 2
- salt- 2 tsp
- black pepper, freshly ground - ½ tsp
- chicken stock- 2 quarts
- chopped fresh basil- 1 tsp
- chopped fresh thyme- 1 tsp
- Diced French bread- 2 cups
- heavy cream- ½ cup
- parmigiano-reggiano cheese, grated- ½ cup
- finely chopped fresh parsley- 1 tbsp
How To Make Caramelized Onion And Parmesan Cheese Soup
- Heat olive oil in a pot.
- Add in garlic, onions and bay leaves.
- Sprinkle pepper and salt.
- Sauté the onions till they are caramelized.
- Pour in stock and add thyme and basil leaves.
- Bring it to a quick boil.
- Lower the heat and let it simmer for 40 minutes.
- Also pour in the cream.
- Keep stirring the soup until the bread has dissolved. Use a hand blender is needed.
- Add parsley and finally the cheese.
- Sprinkle with pepper and salt if required.
- Soup is ready to be served.
