Brief Description
From the culture of rajasthan, introducing a traditional sweet dish Dal ka Seera, basically prepared during the special occasions like marriages and weddings .This is one of the famous sweet dish that is cherished among all the Rajasthan’s. The taste can be best enjoyed during the winter season, as it is believed that this dish protects the body from cold and keeps the warmth of the body. To prepare and cook this recipe, it takes lot of time and patience as well. One extra feature with this is that it requires a good amount of Desi ghee for its preparation. It’s best part is that it can be made in large quantities once and is possible to store it for future .Before serving and reheating, always add a little milk.By using the following recipies the authentic and traditional taste of Dal ka seera can be maintained. Dal ka seera preparation requires patience and proper mixing of all the ingredients.
Preparation Time includes collecting and mixing all the ingredients 10 minutes Cooking Time time includes deep cooking of the halwa 40 minutes Serves 4 serves Ingredients For The Recipe
The recipes to make dal ka seera are as follows:
- Green Moong dal almost 500 g
- Sugar approximately 500g
- 500 g Ghee for cooking
- Elaichi Powder
- Saffron prior soaked in milk
- 250 ml of pure Water
- Milk Few Tbsp.
- For garnishing purposes Dry fruits are the appropriate.
How To Make The Recipe
- To start with, In a bowl Soak the Moong dal for at least for 5 to 6 hours prior.
- Next step is to Wash the Moong dal nicely and slowly by rubbing remove the upper skin.
- Now in a mixer grinder pour in the Dal and grind it to make a fine paste. It is advisable to use water, if it is required.
- Now put a pan on the flame and add both water and sugar now start boiling it.
- The moment the entire sugar gets dissolved, start adding milk but only few table spoons.
- Once the syrup starts boiling, a unusual scum will erupt, it is supposed to be removed using a strainer.
- Now continue boiling the syrup, till the time it becomes sticky and consistent.
- On the other flame take a pan and heat ghee in it and put the dal.
- Continue with addition of khoya and continuously start stirring it. Remember it should be stir continuously in order to avoid burning.
- Now as the dal is cooked (stops sticking to the vessel),continue to stir it till it changes to golden brown and also the desi ghee seperates.
- Now in the sugar syrup add The Elaichi powder and saffron that was soaked in milk.
- Keep stirring until the water gets fully dissolved.
- Now it is ready so take it away from the flame and add dry fruits to garnish it.

Some Useful Tips
- Remember to drain out the entire water from Moong dal, once you see it in excess amount after grinding.
- Seera should not look dry after adding sugar but even if it does ,it is advisable to add ghee from the top.
