Brief Description
Mathri is known as Rajasthani snack. This type of flaky biscuits are also loved by the people of northern region.. These snacks were to be made after influencing from the typical basic need to preserve food for several days into jars. It deviously served withtea along with chilli, lemon and mango pickle. This is served at time of pujas, marriages also its best supper for evening. You can also make Masala Mathri by adding different species according to taste. This dish is most popular among people of northern region. It’s a best supper for people.

Ingredients For The Recipe
- You need to take two cups of Maida
- One fourth cup of fine Semolina, Rava or Sooji
- Take two teaspoon salt
- Take half tablespoon Black Peppercorns
- One eighth teaspoon Baking Powder
- Two teaspoon Curd
- Take seven teaspoon water.
- Then take four teaspoon oil or melted ghee.
- Fry the mixture deeply in ghee or oil.
How To Make The Recipe
- Take a bowl and mix the flour, salt, baking powder and cracked pepper proprrly.
- Take some ghee in your hand and rub it in your palm properly until it doesn’t get its shape into small breadcrumbs.
- Add curd and water or form pliable from them by using the liquid.
- Cover it with a damp cloth then put it aside for thirty minutes.
- Divide the dough into small balls and roll out all the balls.
- Use frying pan to heat oil or ghee for frying.
- At moderate heat fry matries until it gets brown color.
- Take precaution that they should not stick on each other.
- By using paper towels remove it after draining.
- This process should be repeated until all matries should not be fried properly.
- Then you can easily store them for two to three weeks.
- Note: after frying wait until the oil cools for fifteen minutes and remove the strain of flour.
- This oil can also used further.

Some Useful Tips
If you cook the mathris at high heat, they become darker brown. So you should be patient. Add fenugreek leaves to make it delicious.
