Carrot-Cucumber Raita

Raitas are always a refreshing delight for those who love home food. Carrot Cucumber Raita is one of the variant of plain Raita which is healthy and nutritious. Recipe for Carrot Cucumber Raita is very simple that is described below.
Preparation Time 25 minutes Cooking Time 20 minutes Serves 4 serves Ingredients For The Recipe
- Grated Carrots – 1 Cup
- Grated Cucumber – 1 Cup
- Green Chilly – 2 No.
- Coriander Leaves – 1 tablespoon
- Plain Curd – 4 Cups
- Mustard Powder
- Methi Powder
- Turmeric powder
- Salt as per taste
For Garnishing
- Vegetable Powder – 1 tablespoon
- Asafetida powder, a pinch
- Cumin Seeds – ½ tablespoon
How To Make The Recipe
- Prepare raita by mashing the curd with salt and water.
- In a pan heat I tablespoon vegetable oil with turmeric (haldi), hing and cumin seeds.
- Cook till the cumin seeds turn golden brown and pour over the curd or raita.
- Now add grated carrot and cucumber with mustard powder and methi powder.
- Pour finely chopped coriander leaves over Raita for garnish and serve.
