Onion Pickle
Brief Description
In southern states of India onions and shallots are generously used in most of the recipes. Onion pickle is one side dish which is very famous and is served along with many main course recipes. It can be preserved for up to 2 weeks.
Preparation Time 40 minutes Cooking Time 40 minutes Number of Serves 4 Ingredients For Onion Pickle
- Small Onions- 1 Kg
- Coarse mustard powder-10 tsp
- Aniseed powder- 8 tsp
- White cumin powder- 4 tsp
- Ground spices- 2 tsp
- Red chili pepper- 3 tsp
- Salt for onions- 7 tsp
- Turmeric- 2 tsp
- Onions seeds- 1 tsp
- Lemons Juice- 2 tbsp
- Amchoor- 4 tsp
- Salt for the masala- 5 to 6 tsp
- Oil- 1 ½ cups
- Black Salt-1 tsp
How To Make Onion Pickle
- Remove the outer layer of onions.
- Partially slit the onions into 4, keeping intact at the base.
- Sprinkle the onions with 7 tsp of salt. Make sure you rub the salt all over the onions. Keep it aside for 4 hours.
- Heat oil till it becomes smoky. Take it off the heat and let it cool down.
- Throw away all the water of onions. Take all the masalas and add lemon juice and ¼ cup oil to it.
- Now take the masala paste and fill the onions with it. Place the onions in a jar.
- Pour over the rest of oil.
- Now put 1 tsp of salt on the top and seal it tight for 12 days. Onion pickle will be ready to serve after 12 days.
Some Useful Tips
- Do keep in mind that oil should completely cover the onions, so that the pickle doesn’t get spoiled.
