Mix kuttu flour, salt and water to make dough. Cover it with a moist cloth and let it sit for an hour.
For the filling heat oil in a heavy pan and drop in some cumin seeds and let it splutter. Now drop in potatoes, coriander leaves, toasted rajgiri grains, ginger and lemon juice. Mix them well and set it aside when done.
Divide the dough into six equal balls.
Roll each of them into flat rotis and put some stuffing on them. Then seal the stuffing in by bringing all the edges together. And then roll them again into a biggerr shape like 6-7” in diameter.
Now cook this paratha on a tawa and also brush them with ghee.
The paratha is ready to be served. Serve it hot with curd or pickle.
