Ras Malai
Brief Description
Rasmalai is more popular dessert in Bengal which is prepared from soft paneer and chilled creamy milk. It is a delicious, mouthwatering, richness of taste and pretty loaded with lots of sweetness, fresh home made cheese and chana like as Rasgulla. Learn how to make by following this recipe.
Preparation Time Minutes - 5-10 Cook Time Minutes - 50-60 Serves People - 4-6 Ingredients For Ras Malai
- 8 cups (divided) - Whole Milk
- 2 Tbsp - Lemon Juice
- 5 cups (in a pressure cooker) - Water
- 1 cup - Sugar
- pinch - Saffron
- 1/4 tsp - Cardamom Powder
- 2 Tbsp - Pistachios & Almonds, roughly chopped
- To taste - Sugar for the Ras
How to make Ras Malai
- In a pan, boil the milk on average flame till it become reduce half in volume. Grate saffron along with sugar and transfer it into the milk at the time of boiling.
- Now curdle it by adding lemon juice nicely. Turn of the flame and drain the paneer by using thin muslin cloth.
- Flow some cold water above the paneer and sag the muslin cloth on the tap about 30 minutes to soak all of the liquid.
- Take them out the paneer from the muslin cloth and make it via food processor to smooth. Knead well with your palms.
- Cut it into 12 equal pieces informing of a ping pong ball and rolled it with the help of your palms till it become smooth ball form. Press the ball slightly till flattens.
- Add 1 cup sugar and boil it in a pressure cooker and mix the paneer. Shut the lid of pressure cooker and let it cook till 1 whistle sounds. Turn of the flame and set the 5 minutes in timer nicely.
- Now pour little cold water over the lid of pressure cooker to release the pressure.
- Take them out the paneer in a bowl via perforated ladle and set aside to cool completely.
- In a pan, Boil the milk on average heat and add the sugar, nuts and cardamom powder to it. Keep aside.
- When paneer is cool completely to hold it with your hands, nicely drain out the sugar syrup from the paneer and put it into the plate.
- Mix the milk into the paneer and chilled.
- Sprinkle with chopped nuts.
