Kesar Rasmalai
Brief Description

Preparation Time 15 mins Cooking Time 30 mins Serves 4 Ingredients for Kesar Rasmalai
- Milk -4 cups
- Sugar -1 cup
- Water -3 cups
- 6-7 Strands of Saffron Mixed in 3 tbsp Warm Milk
- Cardamom, Pistachio, Almonds
- Lemon Juice
- Whole Milk -3 cups
- Sugar -4-5 tbsp
How to make Kesar Rasmalai
For Ras
- Take milk (3 cups) and thicken it by boiling.
- Take 3 tbsp milk in a bowl and heat it in the microwave few seconds, then add saffron to it.
- Boil the milk and add this mixture to it. Add sugar and all the dry fruits also.
- Keep on cooking it till it reduced to half. Place it a side to cool.
- Now again boil milk(4cups). After few minutes add lemon juice to the milk while stirring continuously.
- Addition of lemon will result in solidification of some milk. Remove such part, called the "channa".
- Tie it in a cloth and let it remain for about 2 to 3 hours.
- After 2 -3 hours, Take it in a bowl and whisk it properly to make it a smooth mixture.
- It will results in Paneer.
- Now from the resultant Paneer make equal size smooth balls.
- Now add water and sugar to the cooker in 3:1 ratio. Add prepare the sugar syrup.
- Allow the cook for two whistles with balls in it.
- After two whistles, take out the balls and drain out their water.
- Press them to give the flat shape.
- Place some ras over these balls.
- Serve cold.
