Carrot Chutney
Brief Description
Carrot chutney is a wonderful alternative to coconut chutney. This sweet-n-spicy chutney goes really well with all kinds of Dosa and kids will absolutely love this bright orange chutney.
Time to Prepare 10 minutes Cooking Time 35 minutes Serves 0 Ingredients For Carrot Chutney
- 3 big carrots
- 1 small piece of tamarind
- ½ tsp mustard seeds
- ½ tsp urad dal
- 4 dried red chilies
- A pinch of asafetida
- Oil as needed
- Salt as required
How To Make Carrot Chutney
- Cut carrots into small pieces and boil them till they turn soft. It can also be done by putting carrots in a pressure cooker with a bit of water and let it cook for a 2 whistles. Let it cool once done.
- Tamarind should be soaked in little water and then squeezed for extracting the pulp and juice. Rest of it should be discarded.
- Heat oil in a pan and add mustard seeds to it. Let it splutter.
- Put in urad dal and dried red chilies while stir frying continuously. Sprinkle asafetida.
- Now take everything and use a blender/processor to churn it all up into a fine paste.
- It can be served alongside bread, dosa and rice.
