Sufaid Murgh
Brief Description
Basically this is kind of korma recipe in which vegetables or meat are boiled with water, stock and cream or yoghurt. The recipe got its name from the Hindi and Urdu meaning for the word "braise"). Follow this easy method of preparing Sufaid Murgh
Preparation Time 15 mins Cooking Time 30 mins Serves 4 Ingredients for Sufaid Murgh
- Boiled chicken divided in 8 pieces-1kg
- Ghee-1/4 cup
- Jeera (cumin seeds)- 1 tsp
- Sabut kali mirch (peppercorns)- 1/2 tsp
- ginger-garlic paste-2 tsp
- salt-1 1/2 tsp
- khus khus (poppy seeds)- 1 tbsp
- Soaked and grounded paste of cashewnuts -1/4 cup
- Vinegar-1 tsp
- Sugar-1 tsp
- Finely chopped coriander leaves - 4 tbsp
- cornflour-1 tbsp dissolved in half cup of water
- milk-1/2 cup
How to make Sufaid Murgh
- Firstly take a saucepan and put chicken in it with 2 cups water and then put it on boiling and boil it until it is completely cooked and do this for about 20 minutes).
- When it becomes cool then drain the chicken pieces and combine milk and the stock together and make the mixture of about 2 cups by adding more water if necessary.
- Now take a heavy base pan and heat some ghee in it and then add peppercorn and zeera in the mixture.
- When it start cracking then add garlic and ginger in it and boil it until it becomes little darker in color.
- Now add salt and ground paste to the mixture and stir it well and then add stock, milk mixture and chicken to this mixture and boil it.
- Now add corn flour mixture in the above prepared mixture and start boiling it and cook it for about 2 minutes.
- Finally mix sugar, half of coriander leaves, vinegar mix altogether and it can be served hot by garnishing it with remaining coriander leaves.
Some Useful Tips
If you are thinking of preparing garlic, fresh chilli and ginger pastes at home, then make sure you add tablespoon of canola/hot vegetable/ sunflower cooking oil to the paste and mix it well this will ensure a longer life for the paste prepared. Refrigerate and use it as per your requirement.
