Sancocho Chicken Soup
Brief Description
Sancocho is a very common Colombian dish which can prepared either with chicken, fish, pork or beef. Traditionally this soup is prepared with hens, but even chicken can be used in its preparation.
Preparation Time 20 mins Cooking Time 40 mins Serves 4 Ingredients for Sancocho Chicken Soup
- Water-2 1/2 quarts
- Salt-1 tablespoon
- Chopped fresh cilantro-1/4 cup
- Crushed garlic-4 cloves
- Chicken leg quarters-6
- No of Peeled plantains-2 and divided into 6 pieces
- Chopped onion-1 large
- Peeled potatoes-2 pounds
- No of fresh cassava roots divided into 6 pieces-4 pounds
- Cooking oil-2 tablespoons
- Peeled onions (thinly sliced)-4 large
- Ground cumin-1 teaspoon or according to taste
- Mild paprika-1/2 teaspoon or according to taste
- Salt-1 teaspoon or as per your taste
How to make Sancocho Chicken Soup
- Firstly take a large pot and put some water in it and then add 1 onion, chicken legs, garlic, plantains, 1 tablespoon salt and chopped cilantro (coriander) in the water and start boiling it, and do this cooking process for about 20 minutes.
- Now add cassava and potatoes to the pot and continue cooking the recipe for another 20 minutes or till the potatoes gets tendered.
- While the cooking process is going on during that time heat some oil in a large skillet over medium flame.
- Now fry onion in the hot oil and then marinate it with salt, cumin and paprika.
- Wait till the time the onions becomes soft then mix tomatoes in it and then remove it from heat.
- Finally put the chicken mixture into bowls and the recipe prepared can now be served well with the tomato onion sauce.
