Mint Chicken Curry

For Paste
- Mint leaves- 1 bunch
- Coriander leaves- ½ bunch
- Chopped onions- 2 tbsp
- Green chilies, chopped- 5
Spice Powder
- Cinnamon- ¼ inch
- Bay leaf- 1
- Star anise- 1
- Chicken – 250 g
- Finely chopped onions- 2
- Finely chopped tomatoes- 2
- Ginger- garlic paste- 1 tbsp
- Cooking oil- 3 tbsp
- Red chili powder- 3 tbsp
- Salt to taste
- Cashew nut paste
How to make Mint Chicken Curry
- Take coriander leaves, mint leaves, green chilies and chopped onions and grind them into a paste using a bit of water.
- Grind bay leaf, star anise and cinnamon to make spice.
- Take a wok and heat up oil. Add in the onions, spice powder and green chilies.
- Fry it all and pour in the mint paste and keep cooking.
- Pour in cashew paste and season it with red peppers and salt.
- Drop in the chicken pieces and add water. Let it all simmer for 15 minutes.
- Mint Chicken Curry is ready to be served. It goes well with rice and chapattis.

Some Useful Tips
- Garlic-ginger paste can also be used in marinating the chicken.
- To make the gravy thick, you can use cashew paste. But keep in mind that will also make your recipe richer.
