Malabar Masala Chicken Curry

Preparation Time 7 mins Cooking Time 30 mins Serves 4 Ingredients for Malabar Masala Chicken Curry
- 1 kg chicken
- 3 ground onions
- 2 ground tomatoes
- 1 tsp ginger paste
- 1 tsp garlic paste
- ½ cup coconut milk (thick)
- 1 cup coconut milk (thin)
- 1 tsp chili powder
- 2 tsp coriander powder
- ½ tsp coriander powder
- 1 tsp garam masala powder
- 1 stalk of curry leaves
- 1 tsp mustard powder
- 3 cloves
- Salt to taste
- Oil as required for frying
How to make Malabar Masala Chicken Curry
- Take a pan and heat up oil in it.
- Drop in mustard seeds and let them splutter.
- Put in curry leaves and cloves.
- Toss in tomato and onions and sauté them.
- Once the onions are brown, add ginger- garlic paste and fry till all the raw smell goes away.
- Toss in the chicken pieces along with chili powder, turmeric powder, coriander and garma masala.
- Keep stirring and make sure they are mixed well.
- Pour in thin coconut milk.
- Add water if needed and salt to taste.
- Once chicken is done add thick coconut milk and let it simmer for another 5 minutes.
