Kerala Style Chicken
Brief Description
Kerala Style Chicken is a very unique and tasty chicken recipe from Kerala. It goes well with Rotis / Rice / Kerala Parotta / Pulao. Follow these simple and easy steps to prepare this recipe at home.
Preparation Time 20 mins Cooking Time 30-45 mins Serves 4 Ingredients for Kerala Style Chicken
For Marinating
- 1 lb chicken
- 1 tbsp chicken masala
For Dry Roast
- 2 tsp coriander seeds
- 5-6 dry red chilies
- 1 tsp- fennel seeds
- ¼ tsp black pepper
- 2 pods of cardamom
- 2 cloves
- 1 bay leaves
- ½ inch cinnamon
- ¼ tsp turmeric powder
For Gravy
- 1 tbsp coconut
- 2-3 dry red chilies
- ½ tsp mustard seeds
- 1 finely sliced medium onion
- 1 tbsp Minced ginger
- 1 tbsp minced garlic
- ½ cup thick coconut milk
- ½ tsp garam masala
- 1 sprig of curry leaves
- Salt as needed
How to make Kerala Style Chicken
- Rub the chicken with chicken masala and set it aside for 30-60 minutes.
- Take the ingredients for dry roasting and roast them. Add turmeric powder when almost done and remove from the heat.
- Once the spices have cooled down a bit grind them into a fine paste along with garlic, ginger and a little water.
- Take a pan and heat up oil at medium flames and fry mustard seeds and dry chilies in it.
- Drop in the sliced onions and sauté them till they are brown in color.
- Toss in the chicken, spice paste and salt and stir them altogether.
- Pour in the coconut milk; lower the flames and keep cooking chicken for around 15 minutes.
- Add curry leaves and garam masala.
- Check the seasoning and adjust accordingly. Keep cooking till gravy thickens and becomes brown in color.
- Remove from the fire; sprinkle little coconut oil on top and keep covered until it’s ready to serve. Take it off the flames and drizzle it with coconut oil and cover it till needed to be served.
- Goes well with steamed hot rice.

Some Useful Tips
- To make sure your homemade chili, garlic and ginger paste stays fresh for long add a tbsp of hot vegetable/ sunflower/ canola oil into it and mix well. Keep them in refrigerator and use when necessary.
