Kerala Biryani Recipe
Brief Description
Kerala Biryani recipe is essentially chicken cooked in traditional spices and layered with rice. Learn how to prepare Kerala Biryani Recipe by following these simple steps.
Preparation Time 15 mins Cooking Time 30 mins Serves 4 Ingredients for Kerala Biryani Recipe
- 2 cups basmati rice
- 1 ½ kg chicken
- ½ tsp chili powder
- 1 ½ tsp coriander powder
- 10 pieces of cinnamon
- 10 cloves
- 8 cardamoms
- 1 inch piece of ginger
- 8 garlic
- 2-3 sprigs of mint
- 2-3 sprigs of coriander leaves
- 20 cashews
- 15 raisins
- Ghee/ butter/ oil as required
- Yoghurt- 3 tsp
- 1 tsp rose essence
- A inch of color (yellow)
- 3 big onions, chopped
- 3 chopped tomatoes
- 2-3 green chilies
For Marinating
- ½ tsp chili powder
- 1 ½ tsp coriander powder
- A pinch of turmeric powder
- Some black pepper
- ½ tsp ginger- garlic paste
- A pinch of masala powder (powdered cardamom, cinnamon and cloves)
- 5-6 drops of lemon juice
How to make Kerala Biryani Recipe
- Grind ginger, garlic and green chilies into a fine paste.
- Then again grind cardamom, cinnamon, cloves and aniseeds.
- Mix the chili, turmeric powder with salt and apply onto the chicken.
- Take wok and heat half the quantity of desi ghee in it. Then fry the raisins and cashews in it. Remove them after done.
- Drop in the onions and sauté them till they are brown, then add in the tomatoes, half of spice mix, ginger and chili paste into it.
- Drop in the marinated chicken pieces and cook covered.
- Take a large vessel and bring salted water to boil in it. Put the rice in the boiling water and cook till 3/4th done. Drain out the water.
- Take an oven proof dish and place 1 quarter of the rice in it. Palace 1/3rd of chicken and gravy over rice. Sprinkle it all with spice powder, coriander, mint, cashews and raisins. Repeat this process till rice and chicken curry are used up.
- Serve hot. Pour over the remaining amount of ghee over the rice and cover the baking dish with a foil and bake for 20 minutes.

- Method is same for mutton biryani recipe, just replace chicken with mutton.
