Jwanu Chicken
Brief Description
Jwanu chicken is a Himalayan recipe from Nepal which is a delicate and very flavorful recipe. Prepare Jwanu chicken at home by following this easy and simple recipe.
Ingredients for Jwanu Chicken
- Chicken cut into 1 inch pieces- 2 lb
- Spinach, washed and torn into pieces- ½ lb
- Red chilies, dried- 3
- Carom seeds (jwanu)- 1 tbsp
- Mustard seeds- 1 tsp
- Chopped onions- 1 cup
- Turmeric powder- 1 tsp
- Crushed black pepper- 1 tsp
- Minced garlic- 1 tbsp
- Minced ginger- 1 tbsp
- Cumin powder- 1 tsp
- Coriander powder- 1 tsp
- Julienned chilies- 3
- Tomatoes- 2 cups
- Curd- 2 cups
- Chicken broth- 2 cups
- Mustard oil- 2 tbsp
- Salt as needed
- Chopped cilantro for garnishing- 1 tbsp
How to make Jwanu Chicken
- Marinate the chicken in mustard oil, black pepper, turmeric powder and salt. Keep it aside for 10-15 minutes.
- Take a sauce pan and heat 2 tbsp of oil. Drop in the red chilies and fry for a bit. Toss in the jwanu and mustard seeds. Fry for another 10-15 seconds. Add in the marinated chicken pieces ad fry on medium flames till brown on both sides. Lessen the flames and toss in ginger, cumin, garlic, fresh chilies and coriander. Stir it altogether for about 2 minutes. Drop in the tomatoes and chicken broth and curd and stir well. Bring all this to a boil and let it simmer on low heat for 20-25 minutes. Make sure the chicken is tender and sauce is of desired thickness.
- In last add spinach and mix it in. allow spinach to cook and season with pepper and salt. Use chopped cilantro to garnish. Can be served with either chapatti or rice.
Some Useful Tips
- To make sure your homemade chili, garlic and ginger paste stays fresh for long add a tbsp of hot vegetable/ sunflower/ canola oil into it and mix well. Keep them in refrigerator and use when necessary.
