Iraichi Mulugu
Brief Description

Preparation Time 15 mins Cooking Time 30 mins Serves 4 Ingredients for Iraichi Mulugu
- 1 whole chicken
- 2.5 cm piece of cinnamon
- 2-3 cloves
- 1 coconut
- 1 tsp coconut oil
- 15g coriander
- A pinch of cumin
- 2 sprigs of curry leaves
- ½ tsp fennel
For Tempering
- 15g ghee
- 2.5 cm piece of ginger
- 2-3 green chilies
- A pinch of mustard seeds
- 2-3 peppercorns
- 2-3 red chilies
- 1 red onion
- Salt as required
- Small tamarind
- 2g turmeric
How to make Iraichi Mulugu
- Heat oil in a frying pan and fry red chilies in it. Toss in pepper, cumin, coriander, turmeric and half of the onions. Keep frying and remove pan off the flames.
- While the pan is still hot drop in fennel, cinnamon and cloves.
- Make a fine paste by grinding all the spices. Smear the chicken with spices. Drop in half of sliced coconut, green chilies, sliced ginger, remaining onions, curry leaves, salt and water. Cover and cook till 75% done.
- Make the remaining coconut (fried) into a fine paste by grinding. Put the tamarind in a cup of water and then extract its juices after a while. Drop in the ground coconut into it and mix. Pour this over the chicken and cook till chicken is tender. There should be enough gravy. Take it off the flames.
- Heat ghee and oil for tempering. Put in sliced onions and fry till it brown. Add in the mustard seeds and curry leaves. Wait for the seeds to crackle and then pour over the curry and mix them altogether.
Some Useful Tips
- To make sure your homemade chili, garlic and ginger paste stays fresh for long add a tbsp of hot vegetable/ sunflower/ canola oil into it and mix well. Keep them in refrigerator and use when necessary.
