Dum Kokur
Brief Description
Dum Kokur is a very tasty and special recipe from Kashmir. Learn how to make this dish by following some simple and easy steps.
Preparation Time 25 mins Cooking Time 30 mins Serves 4 Ingredients for Dum Kokur
- Whole chicken cut into 8 pieces
- Oil – 5 tbsp
- Cloves- 4 to 5
- Bay leaf- 1
- Cinnamon bark- 1 inch
- Thinly sliced medium onions- 1
- Grated ginger- 1 tbsp
For The Marinade
- Curd- 3 tbsp
- Red chili powder- 1 tbsp
- Turmeric powder- ½ tsp
- Salt as needed
- Ginger paste- 1 tbsp
- Garlic paste- 1 ½ tbsp
Grind Together
- Cumin seeds- ½ tsp
- Black cardamom- 2
- Green cardamom - 2
How to make Dum Kokur
- Prepare the marinade by mixing all the ingredients of the marinade and marinate the chicken. Let the marinated chicken sit for 2-3 hours.
- Heat up some oil and drop in cloves, bay leaf and cinnamon bark. Stir fry them for 2-3 minutes.
- Toss in grated ginger and onions and fry them till onions are golden brown.
- Drop in the marinated chicken and continue cooking.
- Add cumin and cardamom.
- Out on the lid and cook for another 30 minutes or till chicken is tender.
- Serve the dish hot
Some Useful Tips
- Put some peppercorn in salt to avoid them from getting wet in winters.
