Cornish Hen
Brief Description
Easily prepare Cornish hen at home by following this simple and easy recipe. Cornish hen recipe is a dish in which a whole chicken (small in size) is fried with herb marinade.
Preparation Time 20 mins Cooking Time 30 mins Serves 4 Ingredients for Cornish Hen
- Butterflied Cornish game hens-4
- Softened butter- 1 stick
- Finely chopped sage leaves- 6 to 7
- Lemon, zest- 1
- Freshly ground black pepper
- Salt to taste.
- Olive oil
- Chopped bacons- 4 strips
How to make Cornish Hen
- Oven must be preheated to 425° F.
- Put the hens on tray fitted with cooling rack in refrigerator to dry the wings for an hour before cooking.
- Put a small pan on heat and melt butter whit salt, pepper, sage and lemon zest.
- Take out the hens from refrigerator. Take two sauté pans and preheat them for some time and use oil coat the pans.
- Use pepper and salt to season the hens and sear it skin side down in the pans.
- Sear until skin caramelizes and turns golden brown in 7-8 minutes.
- Flip birds over, and baste with sage butter. Sprinkle tops with chopped bacon and place in preheated oven to finish cooking, 25 to 30 minutes, basting occasionally. Turn over the hens and baste t using sage butter. Top it with chopped bacons and put it in a preheated oven for 25-30 minutes while basting time to time.
- Keep it aside for 10 minutes before serving it.

Some Useful Tips
- To make sure your homemade chili, garlic and ginger paste stays fresh for long add a tbsp of hot vegetable/ sunflower/ canola oil into it and mix well. Keep them in refrigerator and use when necessary.
